This is the bakery breakfast you can make in your own oven.

Recipe Information

Prep time

30 minutes, plus 1 hour rising

Cook time

8 to 10 minutes per tray

Serves

4 to 6 (makes 12 rounds)

Difficulty

Medium

Origin

Across Lebanon, with Armenian and Baalbek styles

Lahm bi ajin means “meat with dough”, and that is exactly what it is: a thin round of bread dough spread with raw minced meat, onion, tomato and spices, then baked fast in a very hot oven. In Lebanon you buy it hot from the neighbourhood furn in the morning, often with a squeeze of lemon and a glass of laban or ayran on the side. The Armenian community of Bourj Hammoud made the thin, crisp version famous in Beirut, while Baalbek has its own sfiha baalbakiyeh, small open squares pinched at the corners.

What makes a good one is balance. The topping should be tangy (from tomato, pomegranate molasses and lemon), juicy rather than greasy, and spread thinly enough that the meat cooks in the same few minutes the dough takes to crisp.

Ingredients

For the dough

500 g (4 cups) all-purpose flour

7 g (2 1/4 tsp, one packet) instant or active dry yeast

1 tsp sugar

1 1/2 tsp fine salt

60 ml (1/4 cup) olive oil or vegetable oil

About 300 ml (1 1/4 cups) warm water, around 38°C (100°F)

For the topping

400 g (14 oz) minced beef or lamb, about 20% fat

1 medium onion (150 g / 5 oz), grated and squeezed dry

2 medium tomatoes (250 g / 9 oz), very finely chopped and drained

1 tbsp tomato paste

1 tbsp red pepper paste (optional, for warmth)

2 tbsp pomegranate molasses (dibs rumman)

1 tbsp lemon juice

15 g (1/2 cup) flat-leaf parsley, finely chopped

1 tsp seven spice (sabaa baharat)

1 tsp salt

1/4 to 1/2 tsp chili flakes or Aleppo pepper

40 g (1/4 cup) pine nuts (optional)

Instructions

Mix the yeast and sugar into the warm water and leave it for 5 minutes, until a light foam forms on top.

In a large bowl, combine the flour and salt. Add the oil and the yeast water, and mix into a soft dough. Knead for 8 to 10 minutes by hand (or 5 minutes in a stand mixer) until smooth and slightly tacky. Add a spoon of water if it feels stiff.

Cover the bowl and let the dough rise in a warm spot for about 1 hour, until doubled.

Meanwhile, make the topping. Put the meat, squeezed onion, drained tomato, tomato paste, pepper paste, pomegranate molasses, lemon juice, parsley, spices and salt in a bowl. Mix with your hands for a minute until it turns into a soft, spreadable paste. Refrigerate until needed.

Place a baking steel, stone or heavy upturned tray on the top third of the oven and preheat to 250°C (480°F), or as hot as your oven goes, for at least 30 minutes.

Punch down the dough and divide it into 12 balls (about 70 g each). Cover and rest for 10 minutes so the gluten relaxes.

On a lightly floured surface, roll each ball into a round about 15 cm (6 in) across and 3 mm (1/8 in) thick. Place 3 or 4 on a sheet of baking paper.

Spread about 2 heaped tablespoons of topping on each round, pressing it right to the edge with your fingertips in a thin, even layer. Scatter a few pine nuts on top.

Slide the paper onto the hot stone or tray. Bake for 8 to 10 minutes, until the edges and underside are golden and the meat has lost its pink colour and looks slightly dry on top.

Stack the hot rounds on a plate and cover with a clean towel for a minute, which keeps them soft enough to fold. Repeat with the rest.

Tips for the best lahm bi ajin

Squeeze the grated onion and drain the tomato well. Excess water makes the dough soggy.

Do not use very lean meat. A little fat keeps the topping juicy in a hot oven.

Spread the topping thin. A thick layer steams instead of baking and stays pale.

If your topping tastes flat, add more lemon or molasses before baking, not salt.

Variations

For Baalbek-style sfiha, cut the dough into 10 cm (4 in) squares, add a spoon of topping, and pinch the four corners up so the meat sits in an open box. Some families add a spoon of labneh or yogurt to the topping, which is common in the Bekaa. For a vegetarian version, replace the meat with finely chopped roasted red pepper, walnuts and onion, much like muhammara.

How to serve and store

Serve hot with lemon wedges, pickled turnips, fresh mint and cold ayran. Leftovers keep in the fridge for 2 days. Reheat in a dry pan over medium heat for 2 to 3 minutes, which brings back the crisp base better than a microwave. You can also freeze baked rounds, separated by baking paper, for up to 2 months.

For the most authentic flavour, use a good Lebanese pomegranate molasses such as the hand-bottled range from Debs w Remman. And if you want to taste the benchmark before you bake, Beirut’s Ichkhanian Bakery has been making lahm baajin since 1946.

Frequently Asked Questions

Is lahm bi ajin the same as sfiha?

They are close relatives. Lahm bi ajin is usually a flat open round, while sfiha often refers to the small open squares from Baalbek. The topping is very similar.

Do you cook the meat before putting it on the dough?

No. The meat goes on raw and cooks in the oven in under 10 minutes because it is spread so thin.

Can I make the dough ahead?

Yes. After kneading, refrigerate it covered for up to 24 hours. Let it sit at room temperature for 30 minutes before shaping.

What is the difference between lahm bi ajin and lahmajun?

Lahmajun is the Armenian and Turkish name for the same family of dish. The Armenian Beirut style is very thin and crisp, often with more pepper paste.

Thin Lebanese flatbreads topped with spiced beef, tomato, onion and pomegranate molasses.
