Ten minutes of work, and it goes with half the Lebanese table.

Recipe Information

Prep time

10 minutes

Cook time

None

Serves

4 to 6

Difficulty

Easy

Origin

Across Lebanon

Diet

Vegetarian

Khiyar bi laban (also called laban bi khiyar) is the cool, garlicky cucumber and yogurt dish that sits on the table next to anything hot and hearty. In Lebanese homes it is the usual partner for baked or fried kibbeh, mjadra, stuffed vegetables (mahshi), stuffed cabbage and grilled meats. It is somewhere between a sauce and a salad: thick enough to scoop with bread, loose enough to spoon over rice.

What makes it Lebanese rather than Greek tzatziki is the dried mint, which is crushed between the palms over the bowl, and the fact that the yogurt is thinned rather than strained. Small, thin-skinned Lebanese cucumbers (khiyar baladi) give the best crunch. In summer it is often eaten on its own as a light supper with bread.

Ingredients

1 kg (about 4 cups) plain full-fat yogurt (laban)

4 small Lebanese or Persian cucumbers (about 400 g / 14 oz)

1 to 2 garlic cloves

1 tsp fine salt, plus more to taste

1 1/2 tbsp dried mint

60 to 120 ml (1/4 to 1/2 cup) cold water

Extra virgin olive oil, to drizzle

A few fresh mint leaves, to garnish (optional)

Instructions

Rinse the cucumbers and trim the ends. Peel them in stripes if the skin is thick, or leave it on if they are small and thin-skinned. Cut them lengthwise into quarters, then into small dice, about 5 mm (1/4 in).

Crush the garlic with the salt in a mortar, or on a board with the flat of a knife, until it turns into a smooth paste. This spreads the garlic evenly and stops anyone biting into a raw piece.

Put the yogurt in a large bowl and whisk it for about 30 seconds until smooth and glossy.

Whisk in the garlic paste. Add the cold water a little at a time, whisking, until the yogurt flows slowly off the spoon, like thick pouring cream. Use less water if you want a dip, more if you want to spoon it over rice or kibbeh.

Fold in the diced cucumber.

Rub the dried mint between your palms over the bowl so it breaks into fine flakes and releases its smell, then stir it in.

Taste and adjust. It should be clearly salty, garlicky and minty, since the cucumber releases water and dilutes the flavour as it sits.

Chill for 20 to 30 minutes before serving. Just before it goes to the table, drizzle with olive oil and add a pinch more dried mint or a few fresh leaves.

Tips for the best khiyar bi laban

Use full-fat yogurt. Low-fat yogurt turns thin and sour once the cucumber goes in.

Dried mint, not fresh, gives the classic flavour. Fresh mint is fine as a garnish.

Start with one garlic clove. Raw garlic gets stronger as the sauce rests.

If your cucumbers are large and watery, scoop out the seeds before dicing.

Make it no more than a few hours ahead. After a day the cucumber softens and the yogurt gets watery.

How to serve and store

Serve it cold in a wide bowl with kibbeh (baked, fried or kibbeh bi saniyeh), mjadra, stuffed zucchini or grape leaves, rice with vermicelli, or any grill. It also works as a side for spicy potatoes. Keep leftovers covered in the fridge for up to 2 days and stir before serving. Do not freeze it.

Variations

For a thicker dip closer to a mezze, use half labneh and half yogurt and skip the water. Some cooks add a little grated cucumber along with the diced, for a creamier texture, or a pinch of dried thyme. In hot weather, whisk in extra cold water and a few ice cubes and serve it as a chilled soup.

The yogurt is the whole dish, so it is worth using a good one. Bekaa dairies such as Skaff Dairy Farm and Taanayel Les Fermes make the kind of laban Lebanese families buy every week, and a fresh bag of dried mint from a spice house such as Abido makes the flavour sharper.

Frequently Asked Questions

Is khiyar bi laban the same as tzatziki?

They are similar, but tzatziki uses strained yogurt and often dill or fresh herbs. The Lebanese version uses unstrained, slightly thinned yogurt and dried mint.

What do you eat Lebanese cucumber yogurt with?

Most often with kibbeh, mjadra, stuffed vegetables, rice dishes and grilled meats. It is also eaten on its own with bread in summer.

Can I use Greek yogurt?

Yes. Thin it with more cold water until it pours slowly, since Greek yogurt is strained and much thicker than Lebanese laban.

How long does cucumber yogurt sauce keep?

Up to 2 days in the fridge, covered. It is best on the day it is made.

Khiyar bi laban, the Lebanese cucumber yogurt sauce with garlic and dried mint.
