It is a winter soup and a Ramadan favourite, and it tastes like the mountains.

Recipe Information

Prep time

15 minutes

Cook time

1 hour 30 minutes

Serves

6

Difficulty

Easy

Origin

Across Lebanon, especially the south and Bekaa

Freekeh is durum wheat harvested while the grains are still young and green, then burned in the field so the straw and husks char while the moist kernels inside stay intact. The grains are rubbed clean, dried and often cracked. The result has a smoky, nutty flavour unlike any other grain. In south Lebanon and the Bekaa, freekeh season in late spring is still a village event, and families store it as mooneh for the year.

Shorbet freekeh is the most common way to eat it: a homemade chicken broth spiced with cinnamon and allspice, the freekeh simmered in it until tender, and the shredded chicken returned at the end. It is a regular on the iftar table during Ramadan and a standard winter dinner. The same freekeh is also cooked like rice and served under roast chicken or lamb.

Ingredients

For the broth

1 whole chicken, about 1.4 kg (3 lb), or the same weight of bone-in thighs and legs

2.5 l (10 cups) cold water

1 onion, halved, with 3 whole cloves pressed into it

1 cinnamon stick

2 bay leaves

4 cardamom pods and 6 allspice berries

2 tsp salt

1/2 tsp black peppercorns

For the soup

200 g (1 cup) cracked freekeh

3 tbsp olive oil, or 2 tbsp olive oil and 1 tbsp butter

2 medium onions (300 g / 10 oz), finely chopped

1 tsp seven spice (sabaa baharat)

1/2 tsp ground cinnamon

1/2 tsp white pepper

Lemon wedges and chopped parsley, to serve

Instructions

Put the chicken in a large pot and cover with the cold water. Bring to a boil over medium-high heat. As grey foam rises to the surface, skim it off with a spoon for the first 5 minutes; this gives a clear broth.

Add the onion with cloves, cinnamon stick, bay leaves, cardamom, allspice, salt and peppercorns. Lower the heat so the broth barely bubbles, partly cover, and simmer for 50 to 60 minutes, until the chicken is tender and pulls easily from the bone.

While the chicken cooks, spread the freekeh on a tray and pick out any small stones or charred bits of husk. Rinse it in a sieve under cold water until the water runs mostly clear, then drain.

Lift out the chicken and let it cool. Strain the broth through a fine sieve; you should have about 2 l (8 cups). Top up with water if needed. Shred the chicken into bite-sized pieces, discarding skin and bones.

In a clean pot, heat the oil over medium heat. Add the chopped onions and cook, stirring often, until soft and lightly golden, about 8 to 10 minutes.

Add the drained freekeh and stir for 2 minutes to toast it and coat it in oil. Stir in the seven spice, ground cinnamon and white pepper.

Pour in the hot strained broth and bring to a boil. Lower the heat, cover, and simmer for 30 to 40 minutes, stirring now and then, until the freekeh is tender with a slight chew and the soup has thickened slightly. (Whole freekeh needs 45 to 50 minutes and a little more broth.)

Return the shredded chicken to the pot and simmer for 5 more minutes. Taste and adjust the salt. The soup should be loose; add hot water or broth if it gets too thick.

Serve hot with a squeeze of lemon and a little parsley on top.

Tips for the best freekeh soup

Always pick through freekeh. Small stones are common in village-made grain.

Skim the broth early and keep the simmer gentle for a clear, clean soup.

Freekeh keeps absorbing liquid. Add hot broth when reheating.

Toasting the freekeh in oil with the onions brings out its smoky side.

How to serve and store

Serve with lemon, a plate of fattoush and warm bread. The soup keeps in the fridge for 4 days and freezes well for up to 3 months; thin it with water or broth when reheating, since it thickens a lot overnight.

Variations

Use lamb shanks instead of chicken for a richer winter version. For a vegetarian soup, cook the freekeh in vegetable stock with a diced carrot and a little tomato paste. To make freekeh bi djej as a main course, use only 900 ml (3 3/4 cups) broth per 200 g freekeh, cook it covered until dry like a pilaf, and top it with the chicken and toasted almonds.

Look for Lebanese freekeh from grain producers such as Al Najjar Modern Mills in the Bekaa or Al Baydar in Bint Jbeil, which buy and clean wheat from local farmers.

Frequently Asked Questions

What is freekeh?

Freekeh is young green durum wheat that is roasted in the field, then rubbed, dried and often cracked. It has a smoky, nutty flavour.

Is freekeh the same as bulgur?

No. Bulgur is mature wheat that is boiled, dried and cracked. Freekeh is harvested green and roasted, which gives it a smoky taste and a chewier texture.

How long does freekeh take to cook in soup?

Cracked freekeh takes about 30 to 40 minutes at a gentle simmer. Whole freekeh needs 45 to 50 minutes.

Do I need to soak freekeh?

No soaking is needed. Just pick out any stones and rinse it well before cooking.

Lebanese freekeh soup with chicken: smoky green wheat simmered in a spiced homemade broth with shredded chicken.
