It is a soft, glossy stew of eggplant, chickpeas and tomatoes that tastes even better the next day, at room temperature with bread.

Recipe Information

Prep time

20 minutes

Cook time

1 hour

Serves

6

Difficulty

Easy

Origin

Across Lebanon

Diet

Vegan

In Lebanon, moussaka (often written msa’a’a, and called maghmour in many homes) is nothing like the Greek layered bake. It is eggplant cooked in olive oil with onions, garlic, chickpeas and tomatoes until everything slumps together into a thick, sweet and savory stew. It sits on the mezze table, it fills a sandwich, and it is a staple of the meatless days of Lent, when many Lebanese Christians cook without meat or dairy.

Traditionally the eggplant is fried, which gives the most silky result. Roasting it in a hot oven, as here, uses far less oil and is easier at home, and the stew still turns out rich. Serve it warm or at room temperature with Lebanese bread.

Ingredients

1 kg (2.2 lb) eggplant, about 3 medium

120 ml (1/2 cup) olive oil, divided

1 1/2 teaspoons salt, divided

2 medium onions, sliced into thin half moons

6 garlic cloves, thinly sliced

1 teaspoon ground allspice

1/2 teaspoon ground cinnamon

1/2 teaspoon black pepper

1 tablespoon tomato paste

800 g (28 oz) ripe tomatoes, peeled and chopped, or one 800 g (28 oz) can chopped tomatoes

1 teaspoon sugar, only if the tomatoes are sharp

500 g (3 cups) cooked chickpeas, or two 400 g (14 oz) cans, drained

120 ml (1/2 cup) water

1 tablespoon lemon juice or 1 teaspoon pomegranate molasses (optional)

A small handful of chopped parsley, to finish

Instructions

Heat the oven to 230°C (450°F). Line two baking sheets with parchment.

Peel the eggplants in stripes, leaving some skin on so the pieces hold their shape, and cut into 3 cm (1 1/4 inch) cubes.

Toss the cubes with 80 ml (1/3 cup) of the olive oil and 1 teaspoon salt. Spread in a single layer over both sheets without crowding.

Roast for 25 to 30 minutes, turning once halfway, until the cubes are soft all the way through and browned at the edges.

While the eggplant roasts, warm the remaining 40 ml (about 3 tablespoons) olive oil in a wide pot over medium heat. Add the onions and a pinch of salt and cook, stirring now and then, for 10 to 12 minutes until soft and lightly golden.

Add the garlic, allspice, cinnamon and black pepper and stir for 1 minute until fragrant. Stir in the tomato paste and cook 1 minute more.

Add the tomatoes, the sugar if using, and the water. Bring to a boil, then lower the heat and simmer for 10 minutes until the tomatoes start to break down.

Fold in the roasted eggplant and the chickpeas. Cover and simmer over low heat for 20 minutes, stirring gently once or twice, until the sauce is thick and clings to the eggplant. If it catches on the bottom, add a splash of water.

Taste and adjust with the remaining salt, a little lemon juice or pomegranate molasses. Let it rest at least 20 minutes, then scatter with parsley and drizzle with a little olive oil.

Tips for the best Lebanese moussaka

Do not crowd the baking sheets. Packed eggplant steams and turns grey instead of browning.

Use the ripest summer tomatoes you can find. In winter a good can of chopped tomatoes is better than pale fresh ones.

Stir gently once the eggplant is in, so you get soft cubes rather than a purée.

Make it a day ahead. The flavors settle overnight and the stew tastes sweeter.

Variations

Fried eggplant: fry the cubes in batches in 2 cm of hot oil at 180°C (350°F) until golden, drain on paper, and skip the oven.

Add 2 green bell peppers, cut into strips, with the onions for a lighter, fresher flavor.

Some families stir in a few spoonfuls of chili paste for heat.

How to serve and store

Serve as part of a mezze with hummus, olives and pickles, or as a light main with bread and a plate of fresh herbs. It keeps in the fridge for 4 days and is excellent cold, rolled in bread for lunch.

Olive oil is the backbone of this dish, so use a fruity Lebanese one such as Solar Olives from Koura, and a spoon of pomegranate molasses from Debs w Remman if you like a tangy finish.

Frequently Asked Questions

Is Lebanese moussaka the same as Greek moussaka?

No. Greek moussaka is a baked layered dish with meat and béchamel. Lebanese moussaka is a meatless stovetop stew of eggplant, chickpeas and tomatoes.

Is Lebanese moussaka vegan?

Yes. It uses only vegetables, chickpeas and olive oil, which is why it is popular during Lent.

Should Lebanese moussaka be served hot or cold?

Most Lebanese serve it warm or at room temperature. It is also eaten cold from the fridge, often the day after it is cooked.

Can I make it without frying the eggplant?

Yes. Roasting the cubes at 230°C (450°F) for 25 to 30 minutes works well and uses much less oil.

Lebanese moussaka, or maghmour: roasted eggplant, chickpeas, onion and garlic simmered in tomato with allspice.
