It is one of the great vegan dishes of Lebanon, eaten at room temperature with bread and raw onion.

Recipe Information

Prep time

15 minutes

Cook time

50 minutes

Serves

4 to 6

Difficulty

Easy

Origin

Across Lebanon

Diet

Vegan

Loubieh bi zeit means “green beans with oil”, and it belongs to the family of Lebanese dishes called bi zeit: vegetables braised slowly in olive oil, eaten warm or at room temperature, and never with meat. These dishes are central to the Lenten table for Lebanese Christians, who often go without meat and dairy for the 40 days before Easter, and they are part of everyday summer cooking for everyone else.

A good loubieh is not crisp. The beans should be soft and sweet, almost melting, coated in a thick tomato and olive oil sauce with plenty of garlic. Flat Romano beans (loubieh areedeh) are the classic choice, but regular green beans work well too. It tastes even better the next day.

Ingredients

1 kg (2.2 lb) fresh flat green beans (Romano) or regular green beans

80 ml (1/3 cup) extra virgin olive oil

2 medium onions (300 g / 10 oz), halved and thinly sliced

8 garlic cloves, 4 sliced and 4 left whole

4 large ripe tomatoes (700 g / 1.5 lb), peeled and chopped, or 1 can (400 g / 14 oz) chopped tomatoes plus 2 fresh tomatoes

1 tbsp tomato paste

1 1/2 tsp salt

1/2 tsp seven spice (sabaa baharat) or ground allspice

1/4 tsp black pepper

1/2 tsp sugar, only if the tomatoes are sour

120 ml (1/2 cup) water, if needed

Instructions

Wash the beans, snap off the stem ends and pull away any string along the seam. Cut flat beans into 5 cm (2 in) pieces; leave thin beans in halves.

Heat the olive oil in a wide, heavy pot over medium heat. Add the onions and a pinch of salt and cook, stirring, until soft and translucent with golden edges, about 8 minutes.

Add the sliced and whole garlic and cook for 1 minute, until fragrant but not brown.

Add the beans and stir well to coat them in the oil. Cover and let them sweat over medium-low heat for 10 minutes, stirring twice. They will turn a brighter green and start to soften.

Stir in the tomatoes, tomato paste, salt, seven spice and pepper. If the tomatoes are not very juicy, add the water. The liquid should come about halfway up the beans, not cover them.

Bring to a gentle simmer, cover and cook over low heat for 30 to 35 minutes, stirring now and then, until the beans are very tender and the sauce has thickened and turned glossy, with oil showing at the edges.

Taste and adjust the salt. Add the sugar if the sauce tastes sharp. If there is still a lot of liquid, uncover and cook for 5 more minutes.

Let the stew cool for at least 20 minutes before serving. Like all bi zeit dishes, it is best warm or at room temperature.

Tips for the best loubieh bi zeit

Do not rush the cooking. Undercooked beans taste raw and squeaky in this dish.

Use good olive oil; it is the main flavour, not just a cooking fat.

Peel fresh tomatoes by scoring them, dipping in boiling water for 30 seconds and slipping off the skins.

Frozen green beans work in a pinch. Skip the sweating step and reduce the simmer to 20 minutes.

Variations

Loubieh bi lahmeh is the meat version: brown 400 g (14 oz) of cubed beef or lamb in the oil first, then add the onions, beans and tomatoes with 500 ml (2 cups) of water and simmer for about 1 hour until the meat is tender. It is served hot over rice with vermicelli. Some cooks add a handful of fresh coriander fried with the garlic, which is common in the south.

How to serve and store

Serve loubieh bi zeit with Lebanese bread, raw onion wedges or spring onions, radishes and olives. It also sits well next to kibbeh or as part of a mezze. Keep it covered in the fridge for up to 4 days and bring it to room temperature before eating.

With so few ingredients, the olive oil matters. Koura producers such as Solar Olives and Rinawi Olive Oil press the kind of grassy northern oil this dish was made for.

Frequently Asked Questions

Is Lebanese green bean stew vegan?

Loubieh bi zeit is fully vegan: green beans, olive oil, onion, garlic and tomato. The meat version is called loubieh bi lahmeh.

Do you eat loubieh bi zeit hot or cold?

It is usually eaten warm or at room temperature with bread. It is not served straight from the fridge.

Can I use frozen green beans?

Yes. Add them straight from frozen after the garlic and reduce the simmering time to about 20 minutes.

What do you serve with loubieh?

Lebanese bread, raw onion or spring onions, radishes and olives. The meat version is served over rice with vermicelli.

Loubieh bi zeit, the Lebanese green bean stew cooked slowly in olive oil with tomatoes, onion and garlic.
