The marinade does the work, so all you need is a hot grill and a bowl of toum.

Recipe Information

Prep time

20 min plus 4 to 12 hours marinating

Cook time

10 to 12 min

Serves

4 to 5

Difficulty

Easy

Origin

Across Lebanon

Shish tawook (shish taouk) is cubed chicken marinated in yogurt, lemon, garlic, olive oil and a spoonful of tomato paste, then grilled on skewers until lightly charred. The name comes from Turkish: shish means skewer and tavuk means chicken. In Lebanon it sits on every mashawi (grill) menu next to kafta and lahm meshwi, and it is the filling of the most popular sandwich in the country, wrapped in thin bread with toum, pickles and fries.

At home it is a Sunday lunch favorite, cooked over charcoal on the balcony or in the garden. The yogurt and lemon tenderize the chicken, while the tomato paste and paprika give the familiar orange color and help it brown. The secret to great tawook is simple: a long marinade, cubes of the same size and a short, hot cook.

Ingredients

For the chicken

1 kg (2.2 lb) boneless chicken breast or thighs, cut into 3 cm (1 1/4 inch) cubes

1 green bell pepper and 1 small onion, cut into 3 cm (1 1/4 inch) pieces (optional)

For the marinade

120 g (1/2 cup) full-fat plain yogurt

60 ml (1/4 cup) fresh lemon juice (about 2 lemons)

60 ml (1/4 cup) extra virgin olive oil

6 garlic cloves, crushed to a paste

1 tablespoon (16 g) tomato paste

1 teaspoon sweet paprika

1/2 teaspoon Lebanese seven spice (baharat)

1/2 teaspoon dried oregano or thyme

1/4 teaspoon ground cinnamon

1/4 teaspoon ground white or black pepper

1 1/2 teaspoons (9 g) fine salt

To serve

Lebanese pita or thin markouk bread

Toum (garlic sauce), pickled turnips and cucumbers, fresh tomato and lettuce

Instructions

In a large bowl, whisk all the marinade ingredients together until smooth and evenly orange.

Add the chicken cubes and turn them with your hands until every piece is coated.

Cover and refrigerate for at least 4 hours, and up to 12 hours. Do not go past 24 hours, or the lemon will make the surface mushy.

If you use wooden skewers, soak them in water for 30 minutes. Take the chicken out of the fridge 20 minutes before cooking.

Thread the chicken onto skewers, pieces touching but not jammed tight, alternating with pepper and onion if you like. Leave the marinade that clings to the meat.

Heat a charcoal or gas grill to medium high (you should be able to hold your hand above the grate for only 3 to 4 seconds). Oil the grate.

Grill the skewers for 10 to 12 minutes, turning every 2 to 3 minutes, until the edges are charred in spots and the chicken is white all the way through. A thermometer in the thickest piece should read 74°C (165°F).

Slide the chicken off the skewers onto a piece of bread and fold the bread over it for 5 minutes. The bread keeps the chicken moist and soaks up the juices.

Tips for the best shish tawook

Thighs stay juicier than breast and forgive a minute too long on the fire.

Cut the cubes evenly so they cook at the same speed.

No grill? Cook under the oven broiler or in a 230°C (450°F) oven on a rack for 15 to 18 minutes, turning once.

Thick Greek yogurt or labneh thinned with a little water also work for the marinade.

How to serve and store

Serve on a platter with bread, toum, pickles, grilled tomatoes and fries, or roll into sandwiches. Leftovers keep in the fridge for 3 days and are best reheated gently in a pan, or eaten cold in a wrap. Raw marinated chicken can be frozen in its marinade for up to 2 months; thaw overnight in the fridge before grilling.

A good marinade starts with good olive oil and yogurt. Try a Lebanese extra virgin oil from Zeit Boulos and a full-fat yogurt from Balade Farms, and browse more producers in our olive oil category.

Frequently Asked Questions

How long should shish tawook marinate?

At least 4 hours, ideally overnight. Keep it under 24 hours, because the lemon juice starts to break down the surface of the chicken and makes it mushy.

What is shish tawook served with in Lebanon?

It is served with toum (garlic sauce), pickled turnips and cucumbers, fries, grilled tomatoes and Lebanese bread, either on a plate or rolled into a sandwich.

Can I make shish tawook in the oven?

Yes. Bake the skewers on a rack at 230°C (450°F) for 15 to 18 minutes, turning once, or cook them under a hot broiler for about 5 minutes per side.

Is shish tawook Lebanese or Turkish?

The name is Turkish and dates from the Ottoman period, but the yogurt, garlic and lemon marinade served with toum is the version Lebanon made famous and exported across the region.

Juicy Lebanese shish tawook: chicken marinated in yogurt, lemon, garlic and tomato paste, grilled hot and served with toum, pickles and bread.

[169

post-6517","post","type-post","status-publish","format-standard","has-post-thumbnail","hentry","category-lebanese-recipes
<!-- This site is optimized with the Yoast SEO plugin v28.7 -
