It is the centrepiece of a Lebanese Sunday lunch.

Recipe Information

Prep time

30 minutes

Cook time

None

Serves

4 to 6 as a mezze

Difficulty

Medium

Origin

Mount Lebanon and the North

Kibbeh nayyeh is raw kibbeh: very fresh, very lean meat ground to a paste with fine bulgur, onion and spices, served cold with olive oil, fresh mint and raw onion. It is one of the most loved dishes in Lebanon, especially in the mountain towns of the North such as Zgharta and Ehden, and in the South, where it is seasoned with a herb and spice mix called kamouneh. It is classic Sunday lunch food, usually made the same morning the meat is bought.

Because the meat is not cooked, quality and freshness are everything. In Lebanon it is traditionally pounded by hand in a stone mortar (jeren); today most cooks ask their butcher to trim every bit of fat and sinew and grind it fresh, then finish it in a food processor at home.

A word on safety

Eating raw meat carries a risk of foodborne illness. Buy meat the day you serve it from a butcher you trust, tell them it is for kibbeh nayyeh, keep it refrigerated until the last minute, and serve the dish within an hour or two of making it. Raw kibbeh is not recommended for pregnant women, young children, older people or anyone with a weakened immune system.

Ingredients

For the kibbeh

500 g (1 lb) very lean lamb or beef (leg of lamb or beef top round), trimmed of all fat and sinew

150 g (¾ cup) fine brown bulgur (burghul number 1)

1 small onion, quartered

1 teaspoon salt

½ teaspoon ground allspice

¼ teaspoon ground white pepper

¼ teaspoon ground cumin

1 tablespoon dried marjoram or a few fresh basil leaves

120 ml (½ cup) ice water, as needed

To serve

60 ml (¼ cup) good extra virgin olive oil

Fresh mint sprigs, spring onions and radishes

1 white onion, cut into wedges

Thin Lebanese pita bread

Instructions

Put a metal bowl and the food processor bowl and blade in the freezer for 15 minutes. Everything should stay as cold as possible.

Rinse the bulgur in a fine sieve under cold water, then soak it in cold water for 10 minutes only. Fine bulgur softens fast; longer soaking makes the kibbeh mushy. Drain and squeeze out the water firmly with your hands.

Cut the meat into 3 cm (1 inch) cubes, keeping it cold. If your butcher has not ground it, grind it twice through the finest plate of a mincer.

Pulse the onion with the salt, allspice, white pepper, cumin and marjoram in the cold processor until it becomes a wet paste.

Add the meat and process for about 1 minute, adding 2 to 3 tablespoons of ice water, until smooth, pale pink and sticky.

Transfer to the chilled bowl and add the bulgur. Knead with wet hands for 3 to 4 minutes, dipping your hands in ice water often, until the bulgur disappears into a smooth, soft paste. Taste a tiny amount and adjust the salt.

Spread the kibbeh on a flat serving plate in a layer about 2 cm (¾ inch) thick, smoothing it with wet hands.

Press the back of a spoon or a fork into the surface to make a pattern of grooves, which will hold the oil.

Pour the olive oil over the top, garnish with mint and serve right away, very cold, with onion wedges, spring onions, radishes and bread.

Tips for the best kibbeh nayyeh

Lean is non-negotiable. Fat and sinew make the texture stringy and the flavour heavy.

Cold hands, cold bowl, cold meat. Warmth makes the paste greasy and is a food safety problem.

Use the finest bulgur you can find; coarse bulgur stays gritty.

Eat it with your hands: tear a piece of bread, scoop some kibbeh with a little onion and mint.

Variations

Southern kamouneh: replace the spices with 2 tablespoons of kamouneh, a mix of bulgur, cumin, dried marjoram, basil, mint, rose petals and pepper, as cooked in the South of Lebanon.

Kibbeh nayyeh with a spicy kick: add a little Aleppo pepper or chili paste to the onion.

Vegetarian kibbeh: for a meat-free mezze, try potato or pumpkin kibbeh, which uses the same bulgur base.

How to serve and store

Kibbeh nayyeh is best eaten within an hour of making. Do not keep raw leftovers. Instead, shape them into patties and fry them in a little olive oil for 3 to 4 minutes per side the same day, or use them as dough for baked kibbeh.

With so few ingredients, the olive oil is half the dish. A fresh, green Lebanese oil such as Solar Olives from Koura is a fine match, and fine burghul from Rim Mills in the Bekaa gives the smooth texture you want.

Frequently Asked Questions

Is kibbeh nayyeh safe to eat?

It carries the same risks as any raw meat dish. Use very fresh, lean meat from a trusted butcher, keep it cold and eat it right away. It is not advised for pregnant women, young children or people with weak immunity.

What meat is best for kibbeh nayyeh?

Very lean lamb (often leg) or beef top round, trimmed of all fat and sinew and ground the same day.

What is kamouneh?

A southern Lebanese spice and herb mix of bulgur, cumin, dried marjoram, basil, mint, rose petals and pepper, used to season raw and cooked kibbeh.

What do you eat with kibbeh nayyeh?

Olive oil, raw onion wedges, spring onions, fresh mint, radishes and thin Lebanese bread.

How to make Lebanese kibbeh nayyeh safely at home: very fresh lean meat, fine bulgur, kamouneh spices, olive oil and the right garnishes.

[169

post-6484","post","type-post","status-publish","format-standard","has-post-thumbnail","hentry","category-lebanese-recipes
<!-- This site is optimized with the Yoast SEO plugin v28.7 -
