It is an old home-cooking dish, cheaper and gentler than meat kibbeh, and in its meatless form it is a favourite during Lent, when many Lebanese Christians avoid meat. With a filling of spiced beef and pine nuts, it becomes a full family main course.

The tray version below is the easiest way in: no shaping, just two layers of potato dough with the filling in between, scored into diamonds and baked. It is also very good cold the next day with pickles and a salad.

Ingredients

For the potato dough

1 kg (2 lb) floury potatoes (about 5 medium), such as russet

170 g (1 cup) fine bulgur

240 ml (1 cup) hot water

1 small onion, grated, juice squeezed out

30 g (¼ cup) all-purpose flour

2 tablespoons chopped fresh mint or 1 teaspoon dried marjoram

1 teaspoon seven spices

½ teaspoon ground cinnamon

1½ teaspoons salt

For the filling

2 tablespoons olive oil

1 large onion, finely diced

300 g (⅔ lb) ground beef

2 tablespoons pine nuts

½ teaspoon seven spices

¾ teaspoon salt

For baking

60 ml (¼ cup) olive oil

Instructions

Put the potatoes, whole and unpeeled, in a pot of cold salted water. Bring to a boil and simmer for 20 to 25 minutes, until a knife slides in easily. Drain, peel while warm and mash until completely smooth. Let them cool to warm.

While the potatoes cook, put the bulgur in a bowl, pour over the hot water, cover and leave for 15 minutes, until the water is absorbed and the grains are soft.

Make the filling: heat the oil in a frying pan over medium heat, add the pine nuts and stir for 2 minutes until golden, then lift them out. Cook the onion in the same oil for 6 to 8 minutes until soft and golden. Add the beef, seven spices and salt and cook for 8 minutes, breaking it up, until browned. Stir in the pine nuts and set aside.

Heat the oven to 200°C (400°F). Brush a 23 x 33 cm (9 x 13 inch) baking dish with a tablespoon of olive oil.

Add the bulgur, grated onion, flour, mint, spices and salt to the mashed potato. Knead with your hands for 2 to 3 minutes into a smooth, soft dough that holds its shape. If it feels sticky, add a spoonful more flour.

Divide the dough in half. With wet hands, press one half evenly over the bottom of the dish, about 1 cm (⅜ inch) thick.

Spread the filling over it in an even layer.

Flatten handfuls of the remaining dough between wet palms and lay them over the filling like patches, then smooth them together with wet fingers so the top is sealed.

Score the top into diamonds with a knife, cutting through the top layer only. Press your finger into the centre of each diamond if you like, the traditional way, and drizzle the remaining olive oil over the top so it runs into the cuts.

Bake for 40 minutes, until the top is golden brown and the edges are crisp. Let it rest for 10 minutes, then cut along the scored lines.

Tips for the best kibbeht batata

Floury potatoes give a light dough; waxy ones make it gluey.

Boil potatoes in their skins so they do not absorb water.

Do not skimp on the olive oil on top. It is what gives the crisp, golden crust.

If the top is pale after 40 minutes, move the dish to the top rack for 5 minutes.

Variations

Lenten kibbeht batata (vegan): skip the meat and fill the tray with onions slowly cooked in olive oil with a little sumac and chopped walnuts, or simply bake a single layer with no filling, as many families do during Lent.

Shaped potato kibbeh: form the dough into small ovals around the filling and bake at 200°C (400°F) for 25 to 30 minutes, brushed with oil.

Pumpkin kibbeh (kibbet laqteen): replace the potato with roasted, drained pumpkin and fill with spinach, chickpeas and onions.

How to serve and store

Serve warm or at room temperature with plain yogurt or a cucumber yogurt sauce, olives and a tomato and cucumber salad. Leftovers keep, covered, in the fridge for 3 days. Reheat in a 180°C (350°F) oven for 10 to 15 minutes.

For the bulgur, try a Bekaa mill such as Rim Mills, and for the generous olive oil on top, a Lebanese pressing from Zeit Boulos.

Frequently Asked Questions

What is kibbeht batata?

It is Lebanese potato kibbeh: mashed potato mixed with fine bulgur, onion and spices, baked in a tray or shaped, often with a meat or onion filling.

Is kibbeht batata vegetarian?

It can be. Without the meat filling it is vegan, and that version is traditional during Lent.

Why is my potato kibbeh sticky?

Waxy potatoes or wet mash make a sticky dough. Use floury potatoes boiled in their skins, squeeze the onion dry, and add a little flour if needed.

Can I freeze potato kibbeh?

Yes. Freeze baked and cooled pieces for up to 2 months and reheat in the oven from frozen.

Kibbeht batata, Lebanese potato kibbeh: mashed potato and bulgur baked in a tray with a spiced beef filling, plus a meatless version for Lent.

[169

post-6486","post","type-post","status-publish","format-standard","has-post-thumbnail","hentry","category-lebanese-recipes
<!-- This site is optimized with the Yoast SEO plugin v28.7 -
